This unique dish can surely make your appetite full. With just a mixture of rice, fresh coconut, fish, and some spices, you and your fellow campers will surely love munching on this. Already a complete meal – with, rice, fish, and veggies. Now, eat up in less than an hour or even 30 minutes.
1 cup of Fresh coconut (grated) or &frac;34 cup of Unsweetened coconut (dried)
50 grams of Salt fish (dried)
1 Â½ cups of White rice (cold and cooked)Â Note: Grains should be separated with a fork
1 Â½ cups of Black rice (cold and cooked)Â Note: Grains should be separated with a fork
1 cup of Basil, oregano, and coriander (finely shredded)
1 stalk of Lemon grass (soft parts only)
1-inch piece of Fresh ginger (peeled and thinly sliced)
1-inch piece of Galangal root (peeled and thinly sliced)
Â½-inch of Fresh turmeric root (peeled and thinly sliced) or Â½ teaspoon of Ground turmeric
Â½ teaspoon of Salt
Â½ Freshly ground black pepper
1. You should put a wok or a non-stick pan under medium heat using aÂ 2-burner camp stove. Then you should fry the grated coconut for about 5 to 10 minutes until they are golden brown in colour. Set it aside for the meantime to cool down. Afterwards, you can grind it in a blender or you may use a mortar and pestle.
2. Put the salted fish in running water to rinse it. Use paper towels to pat it dry. Afterwards, fry the fish in a non-stick skillet under medium heat until they are thoroughly cooked and light brown in colour on both sides. You can allow around 2 to 3 minutes on each side. Let it cool down for about 5 minutes. You must remove the bones and flake the fish and then set aside.
3. Using a large bowl, you should put in together the rice, flaked fish, coconut, shredded herbs, lemon grass, and of course, the ginger. Use salt and pepper to season then mix well.
4. You must place the rice mixture in a non-stick pan or even a wok. Heat it up for about 5 to 8 minutes or you can also bake it for around 8 to 10 minutes.
